Quack

I cooked my first whole bird this evening. The duck turned out pretty scrumptious. I served it with wild rice, green beans and leek/cheese foccacia. Perhaps next time I will cook it longer on a lower temperature. It wasn't as tender as it could have been. I plan to use the leftovers tomorrow evening to make duck fried rice.
